Kid friendly Recipe: Stuffed Banana Crepes

bananacrepeWhat the heck do you feed your kids? That’s a common question we get. And the answer is… It depends. Our younger child started an ancestral diet early enough that he didn’t form such strong attachments to junky foods. Our older one still looks for approximations of the omnipresent pound cake or snack crackers.

We’ll address that question here in our recipe posts with kid-friendly recipes tested by our own fierce nine-year old critic.

Up first: breakfast for dinner. This is a no-brainer. Bacon and eggs are hearty enough for dinner and require little prep work. It’s a no-brainer unless you child won’t eat bacon and eggs. Drat. So much for simple.

One of our solutions was to prepare crepes, or something similar. We fill them with almond butter and honey, but there are many possibilities for fillings. See below for other filling ideas.

Stuffed Banana Crepes

Ingredients:

  • 1 1/2 large bananas (the more ripe they are, the sweeter the crepes will be)
  • 3 eggs
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • coconut oil
  • almond butter
  • honey

Instructions:

  • Combine bananas, eggs, cinnamon and extracts in a blender.
  • Heat a pan with 1 tablespoon of coconut oil over medium heat. (Add more oil as needed throughout the cooking process).
  • Pour 2-3 inch crepes in pan and cook like pancakes. (If you make them larger, they will be hard to flip.) Once they start to bubble, gently flip them over to cook on the other side. If they brown too quickly, reduce heat.
  • Once cooked, remove the thin crepes (they won’t puff like pancakes).
  • Fill with a spoonful of almond butter and top with a drizzle of honey. Fold or roll into a mini taco and serve.

  • Greek yogurt
  • cream cheese
  • nut butter
  • lemon or orange zest
  • touch of honey
  • berries
  • dark chocolate shavings
  • toasted coconut
  • toasted nuts
  • orange extract
