Pistachio Chicken with Whipped Goat Cheese Butter — Primal Provisions Pick of the Week

We like to serve this topped with our Whipped Goat Cheese Butter (see below).

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 3/4 c. salted pistachios, shelled
  • 1/2 tsp pepper
  • 1/4 tsp salt
  • 1/4 c. olive oil

Instructions:

  1. Preheat the oven to 400’.
  2. Add the 3/4 c. salted pistachios, 1/2 tsp pepper, and 1/4 tsp salt to a food processor and chop nuts finely.
  3. Spread nuts on a plate and press each chicken breast into the nuts to coat on both sides.
  4. Add 2 tbsp of olive oil to the bottom of a glass baking dish.
  5. Top with the chicken breasts.
  6. Drizzle remaining 2 tbsp olive oil over the top of the nut-crusted chicken.
  7. Roast for 30-35 minutes, or until the chicken is cooked.

Serves 4

Carbs: 7g per 1 breast of chicken topped with 2 tbsp goat cheese butter

Tips:

  • We use a food processor like this one: http://amzn.to/2npeF8Y
  • If your nuts begin to brown too quickly, place the pan lower in the oven and/or top with a piece of aluminum foil.

Whipped Goat Cheese Butter

Ingredients:

  • 4 oz. goat cheese, room temperature
  • 4 tbsp butter, room temperature
  • 1/4 tsp salt
  • 2 tbsp basil
  • 1 tbsp rosemary
  • 1 tbsp parsley
  • 1/2 tsp garlic powder

Instructions:

  1. Combine 4 oz. goat cheese, 4 tbsp butter, 1/4 tsp salt, 2 tbsp basil, 1 tbsp rosemary, 1 tbsp parsley, and 1/2 tsp garlic powder in a food processor and blend until herbs are chopped and ingredients combined.
