We like to serve this topped with our Whipped Goat Cheese Butter (see below).
Ingredients:
- 4 boneless, skinless chicken breasts
- 3/4 c. salted pistachios, shelled
- 1/2 tsp pepper
- 1/4 tsp salt
- 1/4 c. olive oil
Instructions:
- Preheat the oven to 400’.
- Add the 3/4 c. salted pistachios, 1/2 tsp pepper, and 1/4 tsp salt to a food processor and chop nuts finely.
- Spread nuts on a plate and press each chicken breast into the nuts to coat on both sides.
- Add 2 tbsp of olive oil to the bottom of a glass baking dish.
- Top with the chicken breasts.
- Drizzle remaining 2 tbsp olive oil over the top of the nut-crusted chicken.
- Roast for 30-35 minutes, or until the chicken is cooked.
Serves 4
Carbs: 7g per 1 breast of chicken topped with 2 tbsp goat cheese butter
Tips:

- If your nuts begin to brown too quickly, place the pan lower in the oven and/or top with a piece of aluminum foil.
Whipped Goat Cheese Butter
Ingredients:
- 4 oz. goat cheese, room temperature
- 4 tbsp butter, room temperature
- 1/4 tsp salt
- 2 tbsp basil
- 1 tbsp rosemary
- 1 tbsp parsley
- 1/2 tsp garlic powder
Instructions:
- Combine 4 oz. goat cheese, 4 tbsp butter, 1/4 tsp salt, 2 tbsp basil, 1 tbsp rosemary, 1 tbsp parsley, and 1/2 tsp garlic powder in a food processor and blend until herbs are chopped and ingredients combined.
