Crockpot Mediterranean Chicken Thighs – Primal Provisions Pick of the Week

Feel free to use roasted red peppers in place of the peppadew peppers if you prefer. You can also use a different type of olive.

Ingredients:

  • 8 bone-in chicken thighs
  • 2 tbsp olive oil
  • Pepper to taste
  • 1 tsp salt plus more to taste
  • 1 c. castelvetrano olives, pitted
  • 2 leeks, sliced
  • 1 c. peppadew peppers, drained and sliced
  • 1/4 c. sherry vinegar
  • 4 cloves garlic, cut into quarters
  • 1 tbsp fresh oregano leaves
  • 1 tbsp fresh rosemary, chopped
  • 1/2 c. chicken stock

Instructions:

  1. Heat 2 tbsp olive oil over medium-high heat.
  2. Add the chicken thighs and season with salt and pepper to taste.
  3. Brown to a golden hue on each side.
  4. Once browned, transfer chicken to a crockpot and top with 1 c. olives, sliced leeks, sliced peppers, 1/4 c. sherry vinegar, cut garlic, 1 tbsp oregano, 1 tbsp rosemary, 1/2 c. chicken stock, and 1 tsp salt.
  5. Cook on low for 6 hours.

Serves 8
