We make this dish on the grill, but you can also cook the chicken in the oven if needed. You can also decrease the amount of jalapeno if you prefer a less spicy dish.
Ingredients:
- 6 boneless, skinless chicken thighs
- 1 lemon, juiced and zested
- 2” piece of ginger, peeled and finely chopped
- 2/3 piece of jalapeno
- 2 cloves garlic, peeled
- 1/2 tsp salt, plus more to taste
- pepper to taste
- ziplock bag
Instructions:
- Add the juice and zest of 1 lemon, the 2” piece of ginger, chopped, 2/3 piece of jalapeno, 2 cloves of garlic, and 1/2 tsp salt to a food processor and purée.
- Add this marinade to a ziplock bag and add the chicken thighs.
- Marinate for at least two hours, but preferably over night.
- Heat the grill to medium-high.
- Remove chicken from marinade and season to taste with salt and pepper.
- Grill for about 5 minutes per side, or until cooked through.
