Spicy Grilled Lemon Ginger Chicken Thighs

We make this dish on the grill, but you can also cook the chicken in the oven if needed. You can also decrease the amount of jalapeno if you prefer a less spicy dish.

Ingredients:

  • 6 boneless, skinless chicken thighs
  • 1 lemon, juiced and zested
  • 2” piece of ginger, peeled and finely chopped
  • 2/3 piece of jalapeno
  • 2 cloves garlic, peeled
  • 1/2 tsp salt, plus more to taste
  • pepper to taste
  • ziplock bag

Instructions:

  1. Add the juice and zest of 1 lemon, the 2” piece of ginger, chopped, 2/3 piece of jalapeno, 2 cloves of garlic, and 1/2 tsp salt to a food processor and purée.
  2. Add this marinade to a ziplock bag and add the chicken thighs.
  3. Marinate for at least two hours, but preferably over night.
  4. Heat the grill to medium-high.
  5. Remove chicken from marinade and season to taste with salt and pepper.
  6. Grill for about 5 minutes per side, or until cooked through.
